Healthy Watercress Energy Balls

Ingredients

20g watercress

30g pumpkin seeds

40g Medjool dates25g whole hazelnuts

10g puffed brown rice

Pinch of ground turmeric

Pinch of cinnamon

Pinch of Himalayan pink salt

1 tsp cacao powder

1 tsp vanilla extract

1 tsp Manuka honey

5g chia seeds

Juice of ½ an orange

Method

Remove the watercress leaves from the stalks and finely chop them. Placed all the pumpkin seeds in the food processor and blend them till they are a fine consistency like bread crumbs. Remove half the pumpkin seeds from the blender and set aside till later. Add all the other ingredients to the blender and on full power blitz till all the ingredients are combined and the mixture starts combining. Remove the mixture and divide into 12 balls and roll in ground pumpkin seeds that have been set aside.

These super easy delicious watercress energy balls can be kept for 3 -5 days in an airtight container in the fridge.
